WINE MAKING PROCESS
The grapes for Ramón do Casar are sourced from the winery's own seven hectares of vineyards in Castrelo de Miño, situated on hillsides above the Miño valley. These vineyards are characterized by poor, granite soils, which contribute to the wine's distinctive minerality. Viticulture practices include hand-harvesting to ensure optimal grape quality. In the cellar, grapes are processed separately by plot, followed by destemming and a cool fermentation to preserve the delicate aromatics. The wine undergoes a short maturation period with its yeasts in barrels before the individual barrels are blended and the wine is bottled, enhancing its texture and complexity.
