WINE MAKING PROCESS
The winemaking process begins with hand-picking estate raspberries at peak ripeness. The berries are immediately flash-frozen to rupture their cell walls, which maximizes juice and color extraction upon thawing. The fruit is then defrosted slowly without pressing to prevent the extraction of bitter seed tannins. This highly concentrated juice—requiring up to two pints of berries for every 375 ml bottle—undergoes a cool, slow fermentation. To preserve the natural sweetness, fermentation is arrested by fortifying the wine with 189-proof neutral grape brandy. The wine is bottled immediately without oak aging to preserve its fresh fruit character.
