WINE MAKING PROCESS
The winemaking process for Real Tesoro's Sherries primarily utilizes the Palomino grape, with Pedro Ximénez used for sweet styles. Fermentation typically takes place in stainless steel. A defining technique is the 'Solera y Criaderas' system, a fractional blending method where wines of different ages are matured and blended in American oak casks. This system involves multiple tiers of barrels, with the oldest wine from the solera tier being bottled. For Fino and Manzanilla styles, aging occurs under a protective layer of yeast known as 'flor'. Other Sherry styles undergo oxidative aging. Brandy de Jerez is also produced using the Solera system, aged in oak casks previously seasoned with Oloroso Sherry.
