WINE MAKING PROCESS
Real Tesoro La Capitana Cream is produced from a blend of Oloroso (75%) and Pedro Ximénez (25%) grapes. The Pedro Ximénez grapes are traditionally dried in the sun ('asoleo') to concentrate sugars. Fermentation is initiated and then halted by fortification. The wine then undergoes an aging process of approximately 10 years in American oak barrels, utilizing the solera and criadera system for fractional blending and maturation.
