WINE MAKING PROCESS
Avinyó Reserva Brut is produced using the traditional method, with secondary fermentation occurring in the bottle. The grapes are fermented in temperature-controlled stainless steel tanks at 14-16°C using indigenous yeasts. The wine then undergoes an extended aging period of 18 to 24 months on its lees before disgorgement. Grapes are harvested at night to maintain freshness and prevent oxidation. The winery exclusively uses fruit from its own organically farmed estate vineyards.
