WINE MAKING PROCESS
The 2021 vintage is crafted from hand-picked grapes sourced from old-vine parcels. To ensure maximum elegance, only the first 50% of the extracted juice—the delicate 'flower must'—is selected. Primary fermentation occurs in temperature-controlled stainless steel tanks at 14–16°C using proprietary yeasts. The final blend comprises nine distinct base wines. Following the traditional method, the wine undergoes secondary fermentation in the bottle and is aged on its lees for a minimum of 30 months. Every bottle is hand-riddled in traditional wooden pupitres and subjected to 'poignettage' (a sharp manual wrist twist) before disgorgement to maximize yeast autolysis and build its signature creamy texture.
