ABOUT THIS WINE
Freixenet Reserva Real Brut is a Cava from Catalonia, Spain, produced by Freixenet. It was originally created in 1987 to commemorate a visit by the Spanish monarchy, earning it the distinction of a 'Royal Wine.' The wine is made using traditional Cava grapes: Macabeo, Xarel-lo, and Parellada. A distinctive aspect of its production is the entirely manual process and the use of a real cork closure, reminiscent of early winemaking practices. Freixenet itself has a long history, originating from the Casa Sala family business in 1861, and has grown into a significant global wine producer.

WINE MAKING PROCESS
Freixenet Reserva Real Brut is produced using the traditional method for Cava. The process begins with the manual harvesting of Macabeo, Xarel-lo, and Parellada grapes. Only the first press, known as 'flower must,' is used. Primary fermentation occurs in temperature-controlled stainless steel tanks with selected yeasts. The wine then undergoes a second fermentation in the bottle, followed by a minimum of 30 months of aging on its lees. The dosage liqueur is aged for 8 months in chestnut barrels. The production is characterized by a manual approach, and the wine is sealed with a real cork.
