WINE MAKING PROCESS
The grapes for the Reserve Cabernet Sauvignon are harvested from select vineyards across the Niagara Peninsula. Upon arrival at the winery, the fruit is destemmed and gently crushed. Fermentation takes place in temperature-controlled stainless steel tanks with daily pump-overs to extract color, flavor, and fine tannins. Following fermentation, the wine undergoes malolactic conversion to soften its acidity. It is then aged in a combination of French and American oak barrels for approximately 12 to 14 months to integrate the tannins and impart subtle spice notes before final blending and bottling.
