WINE MAKING PROCESS
The production of Ricossa Moscato begins with a soft pressing of the Moscato Bianco grapes. The resulting must is filtered and chilled to halt any unwanted fermentation. Fermentation is then carried out in stainless steel tanks at controlled temperatures, with the addition of selected yeasts. The process is managed to achieve a specific alcohol content, retaining the grape's natural sweetness. Following fermentation, the wine is matured in stainless steel tanks for approximately seven months on its lees (sur lie), a technique that contributes to its texture and complexity while preserving its aromatic freshness. No oak aging is involved.
