WINE MAKING PROCESS
The winemaking process for Domaine Weinbach Riesling Cuvée Colette 2020 begins with a gentle whole-cluster pressing of the grapes. Fermentation occurs in old oak barrels (foudres) utilizing indigenous yeasts, allowing for a natural expression of the grape and terroir. Following fermentation, the wine undergoes an aging period of 8-10 months, or sometimes up to 14 months, in these same neutral oak foudres. The harvest is performed manually. Domaine Weinbach adheres to certified organic and biodynamic viticulture practices.
