WINE MAKING PROCESS
The Dopff au Moulin Riesling Cuvée Europe 2023 is produced using grapes harvested at optimum maturity and carefully selected. The winemaking process involves whole bunch pressing, followed by fermentation in stainless steel tanks at controlled temperatures. The wine is intentionally made in an unoaked style to highlight the purity of the fruit and the expression of the terroir. Following fermentation, the wine is aged in steel tanks. The vineyards are managed using the Guyot pruning system, with practices like green harvest and meticulous canopy management. The soils are composed of Vosges sandstone and muschelkalk, and the vineyards are located on the Riquewihr hillside with a south to south-eastern orientation at an average elevation of 250 meters.
