WINE MAKING PROCESS
The Gérard Bertrand Rivesaltes Ambré 2006 is produced as a Vin Doux Naturel. Grapes are pre-selected to achieve the desired alcohol content. Fermentation is stopped through mutage, the addition of neutral grape spirit, to retain natural sugars. The wine then undergoes extended aging in an oxidative environment, a minimum of two years, in large vats and subsequently in oak barrels. This specific vintage was aged in old oak casks until it was bottled in 2018. The AOC Rivesaltes mandates this oxidative aging process, which contributes significantly to the wine's amber color and complex flavor profile.
