WINE MAKING PROCESS
The Demarie Roero Riserva 2020 is produced using traditional winemaking techniques. Fermentation occurs in cement vats with local yeasts, followed by an extended maceration period of 20-25 days with hand mashing. The wine is then aged for 18 months in French oak barrels, 30% of which are new. A further 18 months of bottle aging precedes its release, meeting the stringent aging requirements for Roero DOCG Riserva. The wine is intentionally unfined and unfiltered.
