WINE MAKING PROCESS
The grapes are hand-picked and carefully selected. A portion of the Garganega grapes undergoes a brief drying process (appassimento) for about 15 to 20 days in wooden crates, which concentrates the sugars and aromas. Following pressing, the must undergoes fermentation in stainless steel tanks at controlled temperatures. A small portion of the wine is aged in oak barrels for a few months to add complexity and texture before final blending and bottling.
