WINE MAKING PROCESS
The Romio Prosecco Rosé is produced using the Martinotti/Charmat Method, involving a secondary fermentation in pressurized tanks for a minimum of 60 days. The Glera and Pinot Nero grapes are vinified separately. The Pinot Noir undergoes a pre-fermentative maceration for 12-16 hours to extract color. Maximum yields are regulated at 18 tons/hectare for Glera and 13.5 tons/hectare for Pinot Noir. Grapes are harvested based on sensory analysis and ripening indices that indicate good acidity and minerality. The wine's residual sugar can range from Brut Nature to Extra Dry, with total acidity typically between 5.00-6.50 g/l and pressure exceeding 3 bars.
