ABOUT THIS WINE
The Rosé de Xinomavro 2024 from Apostolos Thymiopoulos / Thymiopoulos Vineyards is a still rosé from P.G.I. Macedonia, Greece, made from 100% Xinomavro grapes. Apostolos Thymiopoulos, a celebrated winemaker, focuses on expressing the terroir through minimal intervention, continuing his family's long history in viticulture. The grapes are grown in schist and granite soils at altitudes of 450-650 meters, benefiting from a continental climate with significant diurnal temperature variations. The wine undergoes a short maceration, spontaneous fermentation with indigenous yeasts, and is aged in second-use oak barrels, resulting in a unique rosé with notable complexity.

WINE MAKING PROCESS
The Rosé de Xinomavro is crafted from 100% Xinomavro grapes harvested manually from young vines in Macedonia, Greece. The grapes undergo a brief 12-hour maceration before spontaneous fermentation with indigenous yeasts in stainless steel tanks, lasting five to six months. Post-fermentation, the wine is aged for three months in second-use 500-liter oak barrels. The vineyards are managed using organic and biodynamic practices, reflecting a commitment to sustainable viticulture and minimal intervention.
