The winemaking process for Rosso dei Sesi begins with a manual harvest of Perricone grapes at optimal ripeness. Fermentation occurs spontaneously using indigenous yeasts. The wine then undergoes maceration on the skins for approximately 15 days. Following fermentation, it is aged in stainless steel tanks.
