The Dislivelli Rosso di Valtellina is a red wine from the Valtellina region of Lombardy, Italy, produced by the artisanal winery Dislivelli, founded in 2020. It is made from 100% Nebbiolo grapes, locally called Chiavennasca. The vineyards are situated on very steep, terraced slopes, a practice known as 'heroic viticulture.' The winery is located in the historic Palazzo Guicciardi in Sondrio. The wine is distinct for its minimal intervention winemaking and its aging process, which takes place exclusively in ceramic amphorae.

WINE MAKING PROCESS
The Dislivelli Rosso di Valtellina is produced using a philosophy of minimal intervention. Grapes undergo spontaneous fermentation with indigenous yeasts. Maceration on skins is extended, lasting 70 days for the 2020 vintage. Following fermentation, the wine is aged for about one year in ceramic stoneware amphorae (Clayver), with no oak aging employed. Minimal to no sulfites are added during the winemaking process.
