WINE MAKING PROCESS
Rotari Gran Rosé Brut 2020 is produced using the Metodo Classico, the traditional method for sparkling wine. The Pinot Noir grapes undergo a brief maceration with their skins to achieve the rosé color. Following primary fermentation in stainless steel tanks, the wine undergoes a second fermentation in the bottle. It is then aged on its lees for a minimum of 24 months, contributing to its complexity. Chardonnay grapes may undergo malolactic fermentation. Grapes are hand-harvested from vineyards located at altitudes between 290 and 750 meters.
