WINE MAKING PROCESS
The winemaking process for S4MG0 Bideona 2019 begins with hand-harvested and manually sorted grapes. The fruit is 100% de-stemmed. Alcoholic and malolactic fermentations occur in stainless-steel tanks, employing a mix of indigenous and cultured yeasts, with gentle pump-overs to manage extraction. Following fermentation, the wine is aged for 12 months in a combination of stainless steel, concrete, and predominantly used oak vessels, with some new oak also utilized. Production for the 2019 vintage was 5,313 bottles.
