WINE MAKING PROCESS
The winemaking process for the Jaffelin Saint-Aubin Premier Cru 'Sur Gamay' 2019 begins with hand-harvested Chardonnay grapes. These are directly pressed using a pneumatic press. Alcoholic fermentation occurs exclusively in French oak barrels. The wine is then aged for approximately 13 months in French oak, with about 40% of the barrels being new. Lees stirring (b芒tonnage) is performed occasionally during this aging period.
