WINE MAKING PROCESS
Saint Mont Les Cépages Préservés 2022 is produced using hand-picked grapes harvested at night to maintain freshness. Fermentation occurs in stainless steel tanks under controlled temperatures. Following fermentation, the wine undergoes aging for 6-8 months on its fine lees, also in stainless steel. This process is designed to highlight the characteristics of the indigenous grape varieties and the Saint Mont terroir.
