WINE MAKING PROCESS
Salasar Crémant de Limoux Brut is produced using the traditional method, which involves a secondary fermentation in the bottle to create its effervescence. The grapes are hand-picked and fermented at controlled temperatures of 16°C. Following the initial fermentation, the wine is aged for a minimum of 12 months on its lees, exceeding the Crémant de Limoux appellation's requirement of nine months. This extended lees aging contributes to the wine's development. After aging, the lees are removed before the wine is bottled.
