WINE MAKING PROCESS
The Salia 2020 is produced using grapes from certified organic vineyards, many of which are old vines. The harvest is manual, with grapes collected in small boxes. Key winemaking techniques include the co-fermentation of Syrah and Bobal grapes, fermentation with indigenous yeasts in small open vats, and malolactic fermentation entirely in barrel. The wine then undergoes aging for 10-12 months, primarily in 300-liter French oak barrels and some 1000-liter tinajas, contributing to its structure and complexity.
