WINE MAKING PROCESS
The winemaking process for Salmos begins with hand-harvested grapes, primarily Cariñena and Garnacha. Fermentation occurs in stainless steel tanks under controlled temperatures. Malolactic fermentation is carried out in French oak barrels. The wine then undergoes aging for approximately 14 to 16 months in French oak, utilizing a mix of barrels and larger foudres. Some aging on fine lees is also part of the process before bottling. Familia Torres employs sustainable, solar, and regenerative farming practices in their vineyards.
