ABOUT THIS WINE
Domaine Skouras Salto Wild Yeast 2021 is a dry white wine from the Peloponnese region of Greece, primarily crafted from the Moscofilero grape. The wine's name, 'Salto,' meaning 'jump' in Italian, reflects its adventurous winemaking approach. The producer, Domaine Skouras, was established in 1986 by George Skouras, who studied oenology in Burgundy and is known for his dedication to quality and terroir. The grapes are grown in the high-altitude vineyards of Mantinia, contributing to the wine's character. A distinctive aspect of this wine is its fermentation with wild yeasts, a choice made to enhance the grape's aromatic expression and potential for evolution.

WINE MAKING PROCESS
The Domaine Skouras Salto Wild Yeast 2021 is produced using 100% Moscofilero grapes. A key technique employed is a short skin contact of 3 hours at 13°C before fermentation. The alcoholic fermentation is conducted in stainless steel vats at 16°C, utilizing wild yeasts. Due to the colored skins of the Mavrofilero clone, up to 48% free-run juice is obtained. Following fermentation, the wine is aged briefly over fine lees. The grapes are sourced from vineyards located at an altitude of approximately 600 meters in Mantinia, with an average vine age of 19 years and yields of 38.40 hl/ha.
