WINE MAKING PROCESS
The winemaking process for San Pedro de Yacochuya Torrontés begins with hand-harvested grapes, collected in small boxes and double-sorted. A brief, approximately 4-hour pre-fermentation skin maceration is employed to enhance aromatic extraction. Fermentation takes place in stainless steel tanks at a controlled temperature of around 15°C, utilizing selected yeasts. The wine is then aged solely in stainless steel, without any oak contact, to maintain its fresh, aromatic profile. This approach emphasizes the purity of the Torrontés grape and the distinctive high-altitude terroir of Cafayate.
