WINE MAKING PROCESS
The Nicolas Millet Sancerre Domaine des Côtes Blanches 2023 is produced from 100% Sauvignon Blanc. Grapes are machine-harvested. Fermentation takes place at very low temperatures in stainless steel tanks, with spontaneous alcoholic fermentation used for some cuvées. The wine undergoes aging on its lees for 12 months in stainless steel vats. It is not aged in oak. The estate utilizes gravity systems in its winemaking process.
