WINE MAKING PROCESS
Santa Chiara is produced using a skin-contact method, where the white grape blend macerates on its skins for approximately two weeks in stainless steel tanks. Fermentation is spontaneous, driven by indigenous yeasts without temperature control, and no sulfur is added during this stage. Following fermentation, the wine matures on its fine lees in stainless steel for one year. It is bottled without fining or filtration, with only a minimal addition of sulfites possible at bottling. The estate adheres to organic and biodynamic farming principles.
