WINE MAKING PROCESS
The Santa Inés Organic Cabernet Malbec Carmenère undergoes a winemaking process that begins with hand-harvesting on April 6th, 2022. The grapes are 100% destemmed and undergo a five-day cold soak. Fermentation takes place at 24-26°C with ambient yeasts, followed by a five-day maceration. For aging, 70% of the wine is matured in used French oak barrels, and 30% in large oak casks (foudres) for a period of 10 months. The wine is certified organic and produced using sustainable agricultural methods.
