WINE MAKING PROCESS
Santa Tresa Insieme Orange Terre Siciliane IGP is produced using extended skin maceration, a technique characteristic of orange wines. The Inzolia grapes are macerated for 2-3 weeks, while the Zibibbo grapes undergo a 6-week maceration. Fermentation occurs on the skins at controlled temperatures of around 17-19°C, with daily gentle punching down. After fermentation, the wines are blended and aged on fine lees for approximately three months before bottling. The grapes are organically grown on the Santa Tresa estate.
