WINE MAKING PROCESS
The Santa Vittoria Langhe Rosso is produced using a blend of Barbera, Nebbiolo, and Dolcetto grapes. Fermentation occurs in stainless steel tanks at 30°C, followed by malolactic fermentation. The aging process is differentiated for each grape varietal: Nebbiolo is aged for 10 months in large Slavonian oak casks, Barbera for six months in French barriques, and Dolcetto in stainless steel tanks. This approach aims to integrate the distinct qualities of each grape into the final blend.
