WINE MAKING PROCESS
Albiana Sauvignon Alto is crafted using grapes from the Pšak Single vineyard. The winemaking process begins with a hand harvest in mid-September. Fermentation occurs spontaneously at low temperatures in oak barrels, encompassing both alcoholic and malolactic stages. Following fermentation, the wine matures for 10-12 months on its fine lees in French oak barrels. The wine is bottled without fining or filtering, with a minimal addition of sulfur. The producer employs sustainable farming practices and aims for low yields.
