WINE MAKING PROCESS
The winemaking process for this Sauvignon Blanc emphasizes a 'minimal intervention' philosophy. Grapes are hand-harvested from the estate's steep, terraced vineyards. For the 2024 vintage, spontaneous fermentation using native yeasts was employed, followed by aging primarily in large oak barrels. Malolactic fermentation was intentionally avoided to preserve the wine's vibrant acidity and freshness. This approach aims to allow the unique terroir of the Bielersee AOC to be fully expressed in the final wine.
