ABOUT THIS WINE
Bénédicte and Stéphane Tissot are pioneers of biodynamic viticulture in the Jura region, taking over the family estate in 1989. Based in Arbois, they craft highly site-specific wines that reflect the complex clay and limestone marls of the region. Unlike the traditional oxidative 'sous voile' style of Jura, this 'ouillè' (topped-up) Savagnin is made in a non-oxidative style, highlighting the grape's natural high acidity, purity of fruit, and intense mineral drive. The estate is fully Demeter-certified and focuses on minimal intervention to let the terroir speak clearly.

WINE MAKING PROCESS
The Savagnin grapes are harvested by hand from biodynamically farmed vineyards. Fermentation occurs spontaneously using indigenous yeasts in oak barrels (foudres and demi-muids). Crucially, the barrels are kept constantly topped up ('ouillé') during the aging process to prevent the formation of a yeast veil (voile), preserving the fresh, primary characteristics of the grape. The wine is aged on its fine lees for around 12 months, adding texture and complexity, and is bottled with minimal sulfur addition and without fining.
