WINE MAKING PROCESS
Domaine Jean Féry Savigny-lès-Beaune Sous la Cabotte 2022 is produced from 100% Pinot Noir. The vineyards are farmed organically and certified by ECOCERT. Harvest is manual. Fermentation occurs with symbiotic yeasts, followed by malolactic fermentation in oak barrels. The wine is aged for up to 12 months in French oak barrels and ceramic egg-shaped vats, with judicious use of new oak.
