WINE MAKING PROCESS
The winemaking for Scighera Rosé follows the ancestral method. Grapes are hand-harvested in mid-September. A short maceration on the Sangiovese skins precedes fermentation with indigenous yeasts in stainless steel tanks. The wine is bottled while still partially fermented, retaining its residual sugar. The second fermentation then occurs naturally in the bottle as the warm season begins, without any added yeasts or sugars. The wine is left unfiltered, unclarified, and unstabilized, with no added sulfur dioxide, allowing the natural CO2 to act as an antioxidant and preserving its inherent organoleptic characteristics.
