WINE MAKING PROCESS
The winemaking process for the Seasalter Sauvignon Blanc involves a dual approach. Thirty percent of the Sauvignon Blanc grapes are fermented and aged for eight months in 300-litre French oak barrels. The remaining portion of the wine is fermented in stainless steel tanks and then left on its fine lees. This combination of oak aging and lees contact aims to build complexity and texture in the final wine.
