WINE MAKING PROCESS
The winemaking process is led by oenologists Diogo Campilho and Pedro Pinhao at Quinta da Lagoalva de Cima. Grapes are grown on alluvial, sandy-loam soils in Alpiarca. To preserve freshness and prevent daytime thermal oxidation, the Sauvignon Blanc and Verdelho grapes are mechanically harvested overnight. Following harvest, the grapes undergo a 48-hour static decantation at low temperatures to clarify the must. Fermentation takes place in temperature-controlled stainless steel tanks at 16C. Each grape variety is vinified separately to maintain its distinct characteristics, and the final blend is meticulously assembled. The wine is aged entirely in stainless steel vats with no oak contact, preserving its clean, fruit-forward profile.
