WINE MAKING PROCESS
The winemaking process for Coppi Serralto Malvasia Bianca begins with de-stalking and soft pressing of the grapes. Fermentation is carried out in stainless steel tanks at controlled temperatures using selected yeasts. Following fermentation, the wine undergoes a period of refinement on its lees for 2-3 months, which contributes to its body and texture. The grapes are harvested in the latter half of September with careful selection in the vineyard.
