ABOUT THIS WINE
Evening Land Vineyards is centered around the historic Seven Springs Vineyard, located on an east-facing slope in Oregon's Eola-Amity Hills. Established in 1984, this vineyard is legendary for its volcanic basalt soils and its exposure to the cool Pacific breezes of the Van Duzer Corridor. Under the stewardship of winemaker Sashi Moorman and sommelier Rajat Parr, the estate focuses on reflecting this unique terroir through biodynamic farming and minimal-intervention winemaking, producing some of the most elegant and site-expressive Pinot Noir in the Willamette Valley.

WINE MAKING PROCESS
The grapes for the Seven Springs Pinot Noir are hand-harvested and strictly sorted. Fermentation is carried out using 100% indigenous yeasts in open-top fermenters, incorporating a portion of whole clusters to add structure and aromatic complexity. The wine is aged in French oak barriques, with a very low percentage of new oak to preserve the pure fruit and mineral character of the vineyard. It is bottled unfined and unfiltered in accordance with biodynamic principles.
