WINE MAKING PROCESS
The winemaking process for Sierra Cantabria Organza begins with a 12-hour cold maceration. Fermentation occurs in new French oak barrels using autochthonous yeasts sourced from the estate. Following fermentation, the wine undergoes an 11-month aging period on its lees, with batonnage performed twice weekly for the first six months. The grapes are hand-harvested and transported in small crates to maintain quality. The vineyards are managed using environmentally integrated viticulture, avoiding chemical products and utilizing organic fertilizers.
