WINE MAKING PROCESS
The winemaking process for Sierra Cantabria Reserva 2014 begins with manual harvesting and meticulous sorting of 100% Tempranillo grapes. Fermentation occurs over 8 days at around 30°C in stainless steel tanks using indigenous yeasts, followed by a two-week maceration with daily pumping over. The wine then undergoes 18 months of aging in French and American oak barrels, with 80% new and 20% two-year-old. The estate employs organic and dry-farmed viticulture with selective biodynamic practices.
