WINE MAKING PROCESS
The creation of the Signature White Blend involves meticulous attention to detail for each grape variety. Sauvignon Blanc and Sémillon undergo a four-hour cold maceration with dry ice before pressing and are fermented with natural yeasts. Sémillon ferments in concrete eggs, while Sauvignon Blanc and Torrontés ferment in French oak barrels, with Torrontés using selected yeasts. After fermentation, Torrontés benefits from two months of lees aging. The final blend is then aged for four to five months in French oak barrels, with a proportion of new oak, before bottling.
