WINE MAKING PROCESS
The Simonis Pinot Gris Clos des Chats is produced from hand-harvested grapes that undergo a 7-hour whole grape pressing. Fermentation occurs with indigenous yeasts in barrels for six months. The wine is then aged on its fine lees until its bottling in July 2023. The winery adheres to a philosophy of minimal intervention, abstaining from added yeasts, fining, chaptalization, and acidification. The estate is certified biodynamic and employs sustainable practices in its vineyard management.
