WINE MAKING PROCESS
The Simonis Pinot Gris 2022 is produced using 100% Pinot Gris grapes from Alsace. The winemaking process begins with the direct pressing of whole grapes. Fermentation is initiated using natural sourdough starters and conducted at controlled temperatures. Following fermentation, the wine is aged on its fine lees for 6 to 9 months. It is then matured in stainless steel vats for several months before being filtered and bottled. The producer, SARL Etienne Simonis, practices organic and biodynamic farming, employing techniques such as ploughing, composting, and using natural treatments in their vineyards.
