WINE MAKING PROCESS
The grapes are sustainably grown and harvested by hand from mid-March to mid-April. Upon arrival at the winery, the fruit is destemmed and crushed, followed by a cold pre-fermentation maceration at 8°C to 10°C in stainless steel tanks for 3 to 5 days to extract color and primary fruit aromas. Alcoholic fermentation takes place in stainless steel tanks at controlled temperatures of 25°C to 28°C for approximately 10 days, utilizing gentle pump-overs to manage skin contact and ensure balanced tannin extraction. The wine is then aged in contact with French and American oak for 6 to 12 months to soften its structure and integrate complex wood notes.
