WINE MAKING PROCESS
The grapes for Slate 8 are hand-picked and hand-sorted at the estate. After destemming and crushing, the fruit undergoes a cool pre-fermentation soak to optimize color and flavor extraction. Fermentation takes place in temperature-controlled stainless steel tanks with frequent pump-overs. The free-run juice is drained and barreled separately, while the remaining pomace is gently pressed. The wine is aged in French oak barrels, blending different vintages to achieve a harmonious and consistent house style.
