WINE MAKING PROCESS
The Small Things Wine Chardonnay 2022 is produced using a minimal intervention approach. The grapes are machine harvested from a sustainably accredited vineyard in Karridale, Margaret River. The free-run juice is added to a combination of seasoned French oak barrels, where half undergo inoculated fermentation and the other half wild fermentation. Lees stirring (battonage) is employed every couple of weeks to enhance complexity and texture. The wine undergoes extended cold settling before racking and canning. It is fermented and aged for six months in used French oak barrels. The wine is vegan-friendly, unfined, unfiltered, and has low sulphur levels, with no malolactic fermentation.
