WINE MAKING PROCESS
The grapes for Small Wonder Riesling are gently whole-bunch pressed, and the resulting juice is cold-settled before being transferred to stainless steel tanks. Fermentation takes place at low temperatures until the wine is dry. Following fermentation, the wine is aged for approximately 4-5 months on lees in stainless steel tanks. The vineyard is certified organic and utilizes minimal irrigation, with vines grown on deep sandy granite soils at a higher elevation. The total production for this wine is 150 cases.
